The beans are roasted across town and dropped off every Tuesday, so nothing on the bar is more than a week old. We pull doubles by default. Decaf exists and we won't make it weird.

Whole cakes, if you warn us.
Vanilla with raspberry jam, chocolate with more chocolate, carrot, or lemon poppy seed. We'll write whatever you want on top, within reason and within about 30 letters.

The starter is called Gary. He's eleven.
Gary lives in a bucket by the back window and gets fed twice a day, which is more often than we do. Every sourdough loaf and every slab of focaccia starts with him.
The rest is two bakers, Nell and Dario. One of us laminates, the other one talks. We get in at 3:30 so the croissants can be out at 6:30, and we close at 2 because by then we're done, in every sense.
The name is a baking thing. The second rise is the proof after shaping. It's also what we do after the 3am alarm.
